Executive Chef, Franco Vitella was raised in Milan, Italy. His parents, Giovanni and Carmella, exposed him to the true creation of Italian cuisine and rich Italian culture. Vitella attended the School of Visual Arts in NYC, and expanded his ability to create unique food presentations. Franco opened Vitella's Deli & Cafe in New Jersey in 2005. His local catering talents quickly caught eye of celebrities in New York City who have brought his talents onboard for catering of parties of upwards to 2000 attendees. Franco's mother, Carmella, originally from Palomonto, Italy, started her career as a chef, at the early age of nine years old. After working all day on the farm, Carmella would come home and cook for her family and the workers that had just spent their day in the field. Carmella learned cooked "from the land" every evening over fire and hot coals. After moving to America, she met her husband, who was also a chef, from Milan. Carmella then worked as a chef in his restaurant for many years. Giovanni Vitella, Franco’s father, has successfully owned and operated two restaurants in Milan, Italy. Giovanni has been featured on TV for his old-world pasta techniques, which he will demonstrate on weekends at Vitella’s Cucina in West Caldwell, NJ. Giovanni has a passion for family & celebration. Giovanni often has crowds laughing & clapping for his entertaining spirit. |
